Salad dressing
This is a liquid or semi-liquid mixture of various ingredients such as oil, egg yolk,
mustard powder, cream, sugar, vinegar, herbs and other fl avourings. It is used to
enhance the taste, texture and overall appearance of salad. Salad dressing also adds
fl avour to the salad and facilitates chewing and swallowing. Additionally, salad

dressing moistens the food. Salad dressing is poured over the salad just before
serving, or served separately.
Types of salad dressing
There are various types of salad dressing. These include vinaigrette dressing, creamy
dressing and cooked dressing. Vinaigrette dressing is made by mixing oil and vinegar
or lemon juice, often fl avoured with pepper, salt, mustard and sugar. Creamy salad
dressing is usually made with mayonnaise. It may also contain yoghurt, sour cream,
buttermilk or milk. Cooked dressing resembles creamy dressing, but it is usually
thickened by egg yolks and then heated gently.
Note: For a basic vinaigrette recipe, a ratio of 3:1 oil to citrus juice or vinager is
applied.
Recipe for making salad dressing
Lemon mustard salad dressing
Ingredients (serve 7 people)
2 tablespoons fresh lemon juice
2 teaspoons mustard powder
6 tablespoons olive oil
1 g salt
1 g ground pepper
1 g ground garlic
Method
1. Add lemon juice, mustard powder and olive oil to a jar or bottle.
2. Seal the lid tightly and give a good shake.
3. Season with salt, grounded garlic and freshly ground pepper to taste. Figure
4.26 shows lemon mustard salad dressing.
