              spoilage. Based on the state in which the produce is consumed, common peas can
              be categorised into two main categories garden peas and field peas.

              (a)  Garden peas (green peas)
              Garden peas are grown for their green, soft seeds and are mostly eaten as

              vegetables. They usually grow as climbing vines and need staking to support
              them as they grow. There are three major types of garden peas, namely common
              garden peas, snow peas and sugar snap peas.

              (i)  Common garden pea: It is also known as shelling pea or English pea. It is
              the most common type grown in Tanzania. The peas inside the pod are consumed,
              but the pod itself is not eaten as it is too tough. These peas must be cooked to
              improve their taste. Figure 6.1 (a) shows a common garden pea.

              (ii)  Snow pea: This type of pea has flat pods containing very small pea seeds.
              (Figure 6.1 (b)). The whole pod can be eaten raw or cooked, but the tough string
              on the side should be removed first. Snow peas are often used in salads or stir-
              fried dishes and are more common in special markets or hotels.
