7.8 Dietary assessment
Teaching steps
1. Use question and answer or any other technique for students

to explore the concept of dietary assessment.
2. Facilitate an interactive discussion about different methods
of dietary assessment including household consumption and
expenditure surveys, food diaries, 24-hour dietary recalls,
food frequency questionnaires, and direct observation of
food consumption.
3. Share with students, the food diaries used for keeping
necessary information on eating habits, the 24-hours recall
table and food frequency questionnaire table. Encourage
students to use them for determining nutrition status of an
individual.
4. Request few students to recall their dietary intake for the
past 24-hours. Guide students to record in the 24-hours
recall table; then, allow classroom discussion on nutrients
adequacy based on the foods consumed.
5. Use examples of dietary assessments tools provided in the
student’s book and assist students on how to conduct them.
6. Guide students to search from the library or the internet the
advantages and disadvantages of using dietary assessment.
Task students to present their findings in class. Make
clarifications where necessary.
7. Guide students to role play on how different dietary
assessments are conducted.
8. Assign students to work in groups to perform Activities 7.8
and 7.9 Make clarification based on their responses.
Assign students to perform Revision exercise 7 from
the Student’s Book. Mark students’ works and provide
feedback.
